I am getting ready to retrofit my house to have video, network, and audio, can I enclose all three in the same conduit, and what kind of conduit is best metal or pvc?

I would recommend using PVC conduit because it doesn't need grounding.

You can enclose all three cable types in the same conduit. It will not create any problems.
